CHICKEN IN ORANGE SAUCE
Ingredients
4 skinless, boneless chicken breasts
1 cup all-purpose flour
Salt and pepper to taste
3-4 tablespoons oil
1 cup orange juice
1/4 cup orange marmalade
Hot cooked rice
Preparation
Place chicken between layers of plastic wrap and pound with flat side of meat mallet to tenderize. On wax paper, combine flour, salt and pepper. Dredge chicken in flour mixture to coat. Heat oil over medium heat; add chicken and brown lightly on each side, not cooking chicken through. Remove chicken, reserving drippings, and place chicken in 9- x 13-inch baking dish coated with non-stick spray; set aside. Add 2 tablespoons remaining flour mixture to hot oil in skillet over medium heat and stir till light brown. Add orange juice and stir till consistency of thin gravy. Add marmalade and stir till thick. Pour over chicken and bake 350 degrees for 20-25 minutes. Serve with rice. Makes 4 servings.
