GLAZED PEPPER STEAK

Ingredients

2 pounds cubed round steak
1 cup all-purpose flour
Salt and pepper to taste
1/4 cup oil
1 cup white wine
1 tablespoon oil
1 large onion, sliced and separated into rings
1 large bell pepper, sliced into rings
Hot cooked rice

Preparation

Cut steak into one-inch wide slices. Combine flour, salt and pepper and dredge meat in mixture. Heat 1/4 cup oil in a skillet over medium heat. Add meat and brown. Place meat in a lightly greased slow cooker. Immediately add wine to drippings in skillet, stirring with wire whisk for one minute. (Wine will deglaze pan and make a delicious sauce.) Pour over meat. Cover and cook on low 45 minutes to 1 hour. Just before serving, heat 1 tablespoon oil in a separate skillet and sauté onions and peppers until tender. Serve meat on bed of rice topped with peppers and onions. Makes 6 servings.
