LEMON ICEBOX PIE

Ingredients

1 cup crushed vanilla wafers
3 tablespoons butter or margarine, melted
1 tablespoon sugar
Additional whole vanilla wafers
1 (14-ounce) can sweetened condensed milk
1/2 cup lemon juice
1 egg
1 (8-ounce) carton non-dairy whipped topping

Preparation

In a mixing bowl, combine vanilla wafer crumbs with melted butter and sugar; press into bottom only of 9-inch glass pie plate. Stand whole wafers around outside edge of pan, pressing into crumb mixture. Bake at 325 degrees for 5 minutes to set. Remove from oven, leaving oven on. In a bowl, combine condensed milk, lemon juice and egg, blending well. Pour into crust. Bake 10-15 minutes, or until firm. Cool, then freeze. Thaw for 10-15 minutes before serving. Top each serving with Cool Whip.
