BUTTERNUT CAKE

Ingredients

CAKE:
1 cup vegetable shortening
2 cups sugar
4 eggs
1 cup self-rising flour
2 cups all-purpose flour
1 cup milk
1 tablespoon butternut flavoring

FROSTING:
1 stick margarine, softened
1 (16-ounce) box confectioner’s sugar
1 (8-ounce) package cream cheese, softened
1 tablespoon butternut flavoring
1 cup toasted chopped pecans

Preparation

In a large mixing bowl, cream shortening, granulated sugar, and eggs on high speed for 10 minutes. Add 1 cup self-rising flour and beat one minute at medium speed. Add remaining flour, milk and flavoring and beat for 1 minute at medium speed. Bake in three greased and floured 9-inch round cake pans for 30 minutes at 350 degrees.

For frosting, combine all ingredients in the order given. Beat with electric mixer until creamy. Frost cooled cake layers.
