LEMON MERINGUE PIE

Ingredients

4 eggs, separated
1 cup sugar
1/2 cup lemon juice
2 tablespoons cornstarch (or 3 tablespoons all-purpose flour)
1 cup milk
1/2 stick margarine
1 (9-inch) pre-baked pie shell
8 tablespoons sugar

Preparation

Cream egg yolks and 1 cup sugar until lemon-colored. Add cornstarch or flour and cream until smooth. Add lemon juice and milk; stir well. In a saucepan cook lemon mixture and margarine over low heat until thickened, stirring constantly. Cool slightly. Pour into cooked pie shell. Beat egg whites with 8 tablespoons sugar until stiff peaks form. Top pie with meringue. Bake at 350 degrees until meringue is light brown.
