Ingredients

1 10-ounce package frozen spinach, chopped
1 6-ounce package Mexican cornbread mix
1/2 teaspoon salt
1/2 cup margarine, melted
3/4 cup cottage cheese
1/2 cup onion, chopped
4 eggs, slightly beaten
1 cup cheddar cheese, grated

Preparation

Preheat oven to 400 F. Thaw spinach well and squeeze out as much moisture as possible. Place drained spinach in a mixing bowl. Add cornbread mix, salt, margarine, cottage cheese, onion, eggs and grated cheese. Mix well and pour into a lightly greased 9-x-13-inch baking dish. Bake for 30 minutes or until lightly browned. Allow to settle for 10 minutes before cutting into squares.
