Ingredients

1 1/2 cups yellow self-rising cornmeal
3/4 cup self-rising flour
1 teaspoon sugar
1 teaspoon canola oil
2 eggs
1 cup cream style corn
1/2 cup finely chopped onion
1/4 cup chopped jalapeño pepper
Buttermilk to make desired consistency

Preparation

Preheat oven to 425 F. Pour a little canola oil in skillet, heating to slight smoking point. Place all ingredients in a large bowl and mix well. Pour mixture into skillet and bake for 25 minutes or until golden brown.
