Ingredients

1 1/2 cups plain white cornmeal
3/4 teaspoon baking soda
1/2 teaspoon salt
1/4 cup oil
2 eggs
1/4 cup grated onion
1 cup buttermilk
1 cup cream style corn
1 cup grated pepper jack cheese

Preparation

Preheat oven to 400 F. Grease 10-inch cast iron skillet or 8×8 baking dish. Mix meal, soda and salt in a bowl. Add oil, eggs, onion, buttermilk and corn. Pour half the batter into greased pan. Sprinkle over cheese and spread evenly. Bake for 25-30 minutes.
