MORGAN COUNTY – Cheesy Bacon Fiesta Cornbread

Ingredients

2 cups self-rising meal
1/2 cup self-rising flour
1 teaspoon baking powder
1 tablespoon sugar
1/2 cup chopped bacon, cooked
1 7-ounce can cream style corn
1 egg, beaten
1/3 cup chopped onion
1 tablespoon pimientos
1 small jalapeño pepper
1 small chili pepper, chopped
1/3 cup buttermilk
1 1/2 cup cheddar cheese
1/4 cup butter
2 tablespoons oil

Preparation

Preheat oven to 350 F. Mix first four ingredients in mixing bowl; add chopped bacon and mix to coat. In separate bowl, mix corn, egg, chopped onion, pimientos and peppers. Add cheddar cheese, milk, butter and oil. Add wet ingredients to dry ingredients and mix together. Pour into greased skillet. Bake approximately 25 minutes or until golden brown.
