Coconut Pound Cake
Ingredients
April Lewis, Limestone County
1 coconut supreme cake mix (Duncan Hines)
1 small cheesecake instant pudding mix
1 cup coconut milk
4 eggs
1 cup water
1/3 cup vegetable oil
Glaze:
1 ½ cup powdered sugar
2 tsp. coconut extract
Preparation
Mix all together, pour into greased and floured tube pan. Bake at 350 degrees for about 50 minutes.
Glaze:
Whisk together then pour over warm cake. Sprinkle shredded coconut over top.
