KAY’S MACARONI AND CHEESE

Ingredients

1 (8-ounce) package elbow macaroni
1/4 cup butter or margarine
1/4 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon pepper
2 cups milk
2 cups (or 8 ounces) grated cheddar cheese

Preparation

Cook macaroni and drain. Meanwhile, melt butter or margarine in medium pan. Remove from heat. Stir in flour, salt and pepper until smooth. Gradually stir in milk; bring to boiling point, stirring, then reduce heat and simmer mixture one minute. Remove from heat. Stir in cheese until melted. Add macaroni. Pour into 1 1/2-quart dish. Bake 15 minutes at 375 degrees.
