BLACKBERRY JAM CAKE

Ingredients

1 cup butter or margarine, softened
2 cups sugar
6 eggs
1 cup blackberry jam or blackberry jelly
1 cup applesauce
1 cup coconut
1/2 cup cocoa
1 teaspoon nutmeg
2 teaspoons allspice
2 teaspoons cinnamon
1 cup chopped nuts
1 cup raisins
3 1/2 cups plain flour, divided
1 cup buttermilk
2 teaspoons soda
2 teaspoons vanilla

Preparation

Cream together the butter and sugar in a large bowl. Add eggs one at a time, beating well after each. Blend in jam, applesauce, coconut, cocoa and spices. In a separate bowl, combine nuts and raisins with 1 cup of the flour, tossing to coat well; set aside. In another bowl, combine buttermilk, soda and vanilla; set aside. To jam mixture, add remaining flour alternately with buttermilk. Beat 1 minute. Stir in nuts and raisins, blending well. Pour batter into four greased 8-inch cake pans. Bake at 350 degrees for 20-25 minutes, or until layers test done. Remove cake from pans and cool. Frost two layers with White Frosting and freeze remaining two layers for future use. (Or make double recipe of frosting and use all layers.)
