BUTTERNUT CAKE
Ingredients
1 cup solid vegetable shortening
2 cups sugar
4 eggs
2 1/2 cups sifted plain flour, divided
1 cup milk
1 tablespoon butternut flavoring
Frosting (recipe follows)
Preparation
In a large mixing bowl, combine shortening, sugar and eggs and beat at high speed of electric mixer for 10 minutes. Add 1 cup of the flour and beat for 1 minute. Add remaining flour and milk and beat for 1 minute. Stir in flavoring. Pour batter into three greased 8-inch cake pans. Bake at 350 degrees for 25 minutes, or until layers test done. Remove cake from pans and let cool completely. Spread frosting between layers and on top and sides of cake.
