PEANUT BRITTLE
Ingredients
1/2 cups sugar
1/2 cup light corn syrup
1/4 cup water
2 cups raw peanuts
1 teaspoons soda
1/4 teaspoon salt
Preparation
Combine sugar, corn syrup and water in a 10-inch iron skillet over medium heat. Bring to a rolling boil, stirring. Add peanuts, a few at a time, so mixture continues boiling. Continue cooking until all peanuts have “popped” and turned brown (hard-ball stage). Remove from heat. Beat in salt and soda and immediately spread on buttered foil. Break into pieces when cool and store in a tightly-covered container.
