CHICKEN PIE

Ingredients

1 (3-pound) chicken, cut up
2 tablespoons butter or margarine
2 tablespoons flour
1 1/2 cups reserved chicken broth
1 can cream of chicken soup
6 hard-boiled eggs, sliced
8-10 thin slices Cheddar cheese
1 (10-count) can buttery-flavored biscuits

Preparation

Cook chicken in boiling water to cover until tender. Remove chicken, reserving broth. Cool chicken, then debone and cut into chunks. Set aside chicken and broth. Melt butter in a frying pan; add flour, stirring to brown. Add broth and soup; set aside. In a greased 9- x 13-inch dish, arrange half of the chicken, and top with half of the egg slices. Repeat layers. Pour soup mixture over all. Arrange cheese slices to cover top. Place biscuits over cheese. Bake at 400 degrees for about 15-20 minutes, or until biscuits are golden brown. Makes 6 servings.
