Ingredients

1 bundle fresh collards, cleaned and washed
3-5 slices salt pork
1/2 cup oil
2 cups water
1/2 cup fresh sliced okra
1 pod hot pepper, sliced

Preparation

Roll collards into a tight bundle. Slice thin. Place salt pork, oil and water in a large boiler on medium-high heat. When hot, add collards. Bring to a boil; reduce heat, cover and simmer for a few minutes. Add okra and hot pepper. Cook, stirring often, until collards are tender when tasted, adding small amounts of water during cooking if needed, just enough to keep collards from sticking. (How long collards cook “just depends on your collards,” Miz Linnie says.) Makes 4-5 servings.
