PEAR PRESERVES
Ingredients
5 quarts peeled, cut-up pears
5 pounds sugar
1 lemon, sliced
Preparation
In a large boiler, layer pears, sugar and lemon. Cover and refrigerate 8 hours or overnight to make its own juice. Bring to a boil. Reduce heat, and let boil gently 2-3 hours, or until juice gets “foamy” and just enough juice remains to cover pears. Place in sterilized jars and seal.
