PEPPER HASH
Ingredients
1/2 gallon hot peppers
6 green bell peppers
5-6 large onions, peeled
4 cups vinegar
1 tablespoon salt
1 cup sugar
Preparation
Wash peppers and remove seeds if desired. (NOTE: Wear rubber gloves to handle peppers.) Fill a blender or food processor container about half full of vinegar. Place part of the peppers and onions, cut up, into container. Chop fine, and pour into a large boiler. Repeat process until all vegetables are chopped. Add any remaining vinegar along with salt and sugar to boiler. Bring to a boil, then reduce heat and boil gently for 35-40 minutes, stirring occasionally. Place in sterilized quart, pint or half-pint jars and seal. Serve with meats or vegetables.
