BEEF & BEAN CASSEROLE
Ingredients
1 pound ground chuck
1 medium onion, chopped
1 green bell pepper, chopped
1 1/2 cups drained cooked pinto beans
1 1/2 cups drained whole-kernel corn
2/3 cup diced tomatoes
3/4 cup barbecue sauce
1 teaspoon oregano
1 teaspoon salt
Black pepper to taste
1 cup grated cheddar cheese
Preparation
In a skillet, cook ground chuck, onion and green pepper until meat is browned; drain. Add all remaining ingredients except cheese. Pour into a greased casserole dish. Cover with foil and bake at 350 degrees for 30-40 minutes. Sprinkle with cheese and return to oven, uncovered, for about 5 minutes, or until cheese melts. Makes 4-6 servings.
