SWEET POTATO BISCUITS
Ingredients
1 cup mashed sweet potatoes
1/4 cup butter, softened
1/4 cup sugar
1/2 teaspoon vanilla
1 1/2 cups self-rising flour
3-5 tablespoons buttermilk
Preparation
Cream together sweet potatoes, butter and sugar. Stir in vanilla and flour. Add milk a tablespoon at the time, until dough holds together. Turn onto floured surface, and pat out about 1/2-inch thick. Cut with biscuit cutter and bake on greased baking sheet at 400 degrees for 10-12 minutes, until golden brown. Makes 6-8 biscuits.
