ZUCCHINI BREAD

Ingredients

3 eggs
2 cups sugar
1 cup oil
1 teaspoon vanilla
2 cups flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 small boxes lemon instant pudding and pie filling mix
2 cups coarsely grated zucchini
1 cup chopped nuts
1/2 cup raisins

Preparation

In a bowl, beat eggs until frothy. Add sugar, oil and vanilla, beating until mixture is thick and lemon-colored. In a separate bowl, sift together the flour, baking powder, soda, salt and dry instant pudding mix. Add flour mixture to egg mixture, blending well. Stir in zucchini; fold in nuts and raisins. Pour batter into two greased and floured 9-x 5-inch loaf pans. Bake at 350 degrees for 1 hour.
