TWEETY’S FRESH APPLE CAKE

Ingredients

1 cup oil
6 eggs
3 cups sugar
4 cups flour
1 teaspoon soda
1 teaspoon salt
4 cups diced peeled apples
2 teaspoons vanilla
1 cup chopped nuts, optional
1 stick margarine
1 cup brown sugar
1/4 cup milk

Preparation

In a medium mixing bowl, cream the oil, eggs and sugar. In a large bowl, sift together flour, soda and salt. Stir in apples. Blend in creamed mixture. Stir in vanilla and nuts. Pour into a greased 10-inch tube pan and bake at 350 degrees for 1 hour-1 hour and 15 minutes, or until cake tests done. In a saucepan, melt margarine. Add brown sugar and milk; bring to a boil and boil for 3 minutes, stirring often. Poke holes in hot cake with an icepick. Pour sauce over cake in pan. Let stand about 1 hour; remove cake from pan.
