MEXICAN BEEF CASSEROLE
Ingredients
1 pound ground beef
1 small onion, chopped
1/2 bell pepper, diced
1 (15-ounce) can stewed tomatoes, undrained
1 (15-ounce) can pinto or chili beans, undrained
1 cup shredded Cheddar cheese
1 package Mexican cornbread mix
Preparation
Brown beef and onion in a skillet; drain well. Add bell pepper, tomatoes and beans. Pour into a 9- x 13-inch baking dish; sprinkle with cheese. In a bowl, prepare cornbread mix according to package directions. Spread over beef and cheese. Bake at 400 degrees, uncovered, for 30-35 minutes, or until cornbread is golden brown. Makes 4 servings.
