MOTHER’S APPLE CAKE

Ingredients

2 1/2 cups self-rising flour
1 1/2 cups sugar
3/4 cup oil
2 eggs
1 teaspoon vanilla
3 cups chopped apples
1 cup chopped pecans

Preparation

Combine all ingredients in a large mixing bowl. Mix with hands until well blended. Mixture will be very stiff. Turn batter into a greased and floured 10-inch tube pan. Bake at 350 degrees for 50-60 minutes, or until cake tests done. Remove from pan to cool.
