EASY LASAGNA
Ingredients
1 pound ground beef
1 (28-ounce) can thick spaghetti sauce
1 1/2 cups water
2 eggs
1/2 cup grated Parmesan
1 (16-ounce) container cottage or ricotta cheese
3 cups shredded mozzarella cheese
1 teaspoon salt
1/4 teaspoon pepper
8 ounces uncooked lasagna noodles, cooked according to package directions and drained
Preparation
Brown and drain beef. Add spaghetti sauce and water. Cover and simmer for about 10 minutes. In a bowl, combine eggs, the Parmesan, cottage and mozzarella cheeses and the salt and pepper, blending well. Spread 1 cup of the meat sauce in the bottom of an 11- x 15-inch pan. Arrange 3 lasagna noodles over sauce. Cover with 1 1/2 cups of the meat sauce. Pour half of cheese mixture over meat sauce. Top with 3 lasagna noodles. Top with 1 1/2 cups meat sauce and remaining cheese mixture. Top with 3 lasagna noodles. Spread remaining meat sauce over all. Cover with foil. Place pan on a cookie sheet. Bake at 350 degrees for 55 minutes. Remove foil and bake 10 minutes longer. Let stand for 10 minutes before serving. Makes 12 servings.
