4 chicken breasts, cooked, deboned, and shredded
2 tablespoons butter or margarine
1/2 package taco seasoning mix
2 (5-ounce) packages saffron yellow rice, prepared according to package directions
2 cans nacho cheese soup
1 soup can milk
1 (16-ounce) jar salsa
Combine warm chicken with butter and taco seasoning. Let sit 10 minutes. Blend in remaining ingredients except cheese. Place in a 9- x 13-inch dish. Sprinkle cheese over top. Bake, uncovered, at 350 degrees for 30 minutes. Makes 8-10 servings.
