BANANA CUPCAKES
Ingredients
2/3 cup solid vegetable shortening
1 1/2 cups sugar
2 eggs
4 tablespoons buttermilk
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup mashed banana
1 teaspoon vanilla
1 cup chopped nuts
Preparation
Cream shortening and sugar together. Add eggs, beating well. Blend in buttermilk. Sift together flour, soda, baking powder and salt; add to first mixture, blending well. Fold in banana, vanilla and nuts. Place paper cupcake liners in muffin tins. Spoon batter into cups, filling 2/3 full. Bake at 375 degrees for 15-20 minutes, or until tops spring back. Makes about 3 dozen.
