BLUEBERRY CREAM PIE

Ingredients

3/4 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 egg yolks
3 cups milk
1 teaspoon vanilla
1 tablespoon butter
1 1/2 cups blueberries
1 (9-inch) pie shell, baked and cooled
1 cup whipping cream
1/4 cup powdered sugar

Preparation

In a large saucepan, stir together the sugar, cornstarch and salt. In a bowl, combine egg yolks and milk, blending well. Slowly add to sugar mixture, blending until smooth. Cook over medium heat, stirring constantly, until thickened, about 15 minutes. Remove from heat; add vanilla and butter, stirring until butter melts. Fold in blueberries. Cool. Pour into baked pie shell. In a large bowl, beat the whipping cream at high speed, until soft peaks form. Gradually add powdered sugar, and beat until stiff peaks form. Spread over filling. Chill before serving. (NOTE: For Blueberry Banana Cream Pie, pour half the blueberry filling into pie shell. Slice one banana over the blueberry filling and top with remaining blueberry mixture.)
