PAT’S BLUEBERRY COBBLER
Ingredients
3 cups plain flour
1 3/4 cups sugar
1 tablespoon baking powder
1 teaspoon salt
2 eggs, beaten
1/3 cup solid vegetable shortening, melted
1 1/2 cups milk
1 teaspoon vanilla
3 cups fresh blueberries
Topping, recipe follows
Preparation
In a mixing bowl, combine flour, sugar, baking powder and salt. Add eggs, shortening and milk, blending well. Stir in vanilla. Fold in blueberries. Pour batter in a greased oval 3-quart baking dish. Sprinkle Topping over batter. Bake at 350 degrees for 30-40 minutes.
