CHOCOLATE CAKE

Ingredients

3/4 cup solid vegetable shortening
1 1/2 cups sugar
3 eggs, well beaten
2 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons cocoa
3/4 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon lemon extract
1 cup chopped pecans
Chocolate Frosting (recipe follows)

Preparation

Cream shortening; gradually add sugar and mix until light and fluffy. Blend in eggs. Combine flour, baking powder, soda, salt, spices and cocoa in a bowl. Alternately add flour mixture and buttermilk to sugar mixture, beating well. Blend in flavorings and pecans. Pour into three greased cake pans. Bake at 350 degrees for 25-30 minutes. Remove from pans to cool completely. Frost.
