SORGHUM SKILLET CAKE
Ingredients
3/4 cup sugar
1/2 cup butter, softened
1 egg
1 teaspoon vanilla
3/4 cup evaporated milk
2 cups self-rising flour
1 cup sorghum syrup or molasses*
Preparation
Cream sugar and butter together. Mix in egg and vanilla. Add milk and flour alternately, blending well. Blend in syrup. Pour mixture into a lightly greased 10-inch cast iron skillet. Bake at 350 degrees for 1 hour, or until cake tests done. (*1 cup of honey may be substituted for molasses.)
