Potato Log

Ingredients

1 small Irish potato
1 (8-ounce) jar peanut butter
1 box powdered sugar

Preparation

Peel potato and boil until tender. Drain water and mash potato with a fork. Slowly mix sugar and potato together. Roll mixture out into a thin layer on a piece of waxed paper. Spread peanut butter onto the potato and sugar layer, then roll into a log. Wrap the roll in waxed paper and refrigerate until cold. Slice and serve. –Shannon Witherington Department of Organization
