EGG & CHEESE CASSEROLE
Ingredients
1 dozen eggs
1 (8-ounce) carton cottage cheese
1 (8-ounce) package cream cheese, cut into small cubes
1 (8-ounce) block Monterey Jack cheese, grated
Preparation
In a large bowl, whisk eggs together. Blend in cottage cheese. Stir in cubed cream cheese and grated Monterey Jack, blending well. Spray 3-quart round or rectangular baking dish with non-stick cooking spray. Pour mixture into dish. Bake at 350 degrees for 45 minutes, or until a knife inserted in center comes out clean. Makes 12-16 servings.
