SAUSAGE CASSEROLE

Ingredients

1 pound hot ground pork sausage
1 pound regular ground pork sausage
2 cups cooked rice
5 cups crisp rice cereal
2 (8-ounce) blocks sharp cheddar cheese, grated and divided
4 eggs, beaten
1/4 cup milk
2 cans cream of celery soup

Preparation

In a large skillet, brown hot and regular pork sausage together over medium heat, stirring to crumble; drain. Stir in cooked rice. Divide mixture evenly between two greased 2-quart casseroles. Sprinkle each casserole with equal amounts of cereal. Sprinkle 1 cup cheese over each casserole. In a bowl, combine eggs, milk and cream of celery soup. Pour half over each casserole. Sprinkle each with 1 cup cheese. Bake at 350 degrees for 40 minutes. Makes 16 servings.
