CHINESE CHICKEN SALAD
Ingredients
3 cups chopped cooked chicken
1 medium head cabbage, chopped
1 bunch green onions, tops only, chopped
2 packages Ramen chicken-flavored noodles
8 tablespoons sesame seeds
1 (2.25-ounce) package sliced almonds
3 tablespoons butter
4 tablespoons sugar
1 cup oil
1 teaspoon monosodium glutamate (Accent)
1 teaspoon salt
1/2 teaspoon pepper
6 tablespoons vinegar
Preparation
Combine chicken, cabbage and green onions in a large bowl; mix well and set aside. Reserve seasoning packets from noodles. Place noodles in a bowl and coarsely crush. Stir sesame seeds and almonds in with noodles. Melt butter in a skillet; add noodle mixture and cook over medium heat, stirring, until toasted; set aside. In a separate bowl, combine flavor packets from noodles with sugar, oil, MSG, salt, pepper and vinegar; mix well and set aside. About 20-30 minutes before serving, add noodles and dressing mixture to chicken, tossing together well. Makes 12-14 servings.
