COOL WHIP DELIGHT

Ingredients

1 3/4 cups cake flour, sifted before measuring
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup butter, softened
1 cup sifted sugar
1/2 cup milk
1 teaspoon almond extract
3 egg whites
Icing (recipe follows)

Preparation

In a medium bowl, combine the cake flour, baking powder and salt; set aside. In a large bowl, cream butter; gradually add sugar, beating until light and fluffy. Blend in the flour mixture, then the milk, mixing well. Stir in almond extract. In a separate bowl, beat egg whites until stiff but not dry. Fold into batter. Pour into a greased 9-inch tube or round pan. Bake at 350 degrees for 35 minutes. Let cool in pan 10 minutes before removing to wire rack to cool. Spread Icing over cooled cake.
