LEMON CHRISTMAS CAKE

Ingredients

1 pound butter, softened
2 cups sugar
6 eggs, separated
1 1/2 ounces pure lemon extract
4 cups all-purpose flour, divided
1 quart pecans, chopped
1/2 pound candied cherries, chopped
1/2 pound candied pineapple, chopped
White grape juice

Preparation

Cream butter. Gradually add sugar, mixing well. Add egg yolks one at a time, beating well after each addition. Blend in lemon extract and 3 cups flour. In a separate bowl, combine pecans and candied fruits with remaining 1 cup flour, tossing to mix. Add to batter, blending well. In a clean bowl, beat egg whites until stiff but not dry. Fold into batter. Pour batter into a greased 10-inch tube pan. Bake at 325 degrees for 30 minutes, then reduce heat to 300 degrees and bake 1 hour more, or until cake tests done. Let stand in pan overnight. Remove from pan and brush with grape juice. Wrap with cheesecloth, and store 3-4 weeks before serving.
