PINEAPPLE COCONUT SURPRISE CAKE

Ingredients

1 box yellow cake mix
1 (15 1/2-ounce) can sweetened crushed pineapple, undrained
2 eggs
1 (7-ounce) bag coconut, divided
1/2 cup firmly packed brown sugar
1/2 cup margarine
1/2 cup granulated sugar
1 (5-ounce) can evaporated milk

Preparation

In a mixing bowl, combine cake mix, undrained pineapple, eggs and 1 cup coconut. Beat at medium speed of electric mixer for 2 minutes. Pour batter into a greased 9- x 13-inch pan. Sprinkle brown sugar over top. Bake at 325 degrees for 30 minutes. Ten minutes before cake is done, combine margarine, granulated sugar and evaporated milk in a saucepan. Bring to a boil and boil for 5 minutes. Remove from heat and stir in remaining coconut. Spoon over hot cake.
