VICKI’S PINEAPPLE DRESSING

Ingredients

1 cup sugar
1 tablespoon flour
1 egg, beaten
3/4 cup pineapple juice
1/4 cup lemon juice
1 tablespoon butter
Fruit (fresh sliced bananas, cubed cantaloupe, sliced peaches, seedless grapes and strawberries, and drained canned pineapple chunks and mandarin orange segments)

Preparation

In a saucepan, combine sugar and flour, stirring until well blended. Gradually blend in egg and juices. Add butter. Over medium heat, cook mixture, stirring constantly, until thickened, about 10 minutes. Combine fruit in a glass serving bowl. Pour desired amount of dressing over fruit and mix well. (Note: Remaining dressing can be refrigerated in a tightly covered container for up to a month.)
