HASH BROWN CASSEROLE
Ingredients
1 (32-ounce) package frozen hash brown potatoes, thawed and drained
1 stick butter
1 cup grated sharp Cheddar cheese
1 large onion, chopped
1 can cream of chicken soup
1 (16-ounce) carton sour cream
1 teaspoon salt
1/2 teaspoon pepper
1 (6-ounce) can French-fried onions
Preparation
Place thawed potatoes in a bowl. Melt butter and pour over potatoes. Add cheese, chopped onion, soup, sour cream, salt and pepper, stirring to blend. Pour into a greased 3-quart casserole. (Can be frozen or refrigerated at this point. If frozen, allow to thaw completely before baking.) Cover with aluminum foil, and bake at 350 degrees for 45 minutes. Remove from oven; sprinkle onions over casserole. Return to oven and bake, uncovered, 10-15 minutes longer. Makes 20 servings.
