1 cup sugar
1/2 stick butter or margarine
1 (5-ounce) can evaporated milk
1 tablespoon vanilla
1 (7-ounce can coconut, divided
1 (9-inch) pie shell, unbaked
Cream eggs and sugar together; blend in melted butter, followed by the milk, vanilla and 3/4 can of coconut. Pour mixture into pie shell. Sprinkle remaining coconut over top. Bake at 350 degrees for 30-45 minutes, until filling is set and top is golden brown.
