GRANDMOTHER’S POUND CAKE
Ingredients
1 stick margarine
1 stick (1/2 cup) butter-flavored solid vegetable shortening
2 cups sugar
5 large eggs
2 cups plain flour
1 teaspoon each coconut, orange, lemon and butternut flavoring
1 1/2 cups powdered sugar
1/2 (6-ounce) can frozen orange juice concentrate
Preparation
In a large bowl, cream together the margarine and shortening. Add sugar 1 cup at a time, beating well after each addition. Add eggs one at a time, beating well after each addition. Gradually add flour, blending well. Add flavorings to batter. Pour batter into a greased and floured tube pan. Place in cold oven. Turn to 300 degrees. Bake 55-60 minutes, until a toothpick inserted in center comes out clean. Meanwhile, combine powdered sugar and orange juice concentrate in a small bowl, blending well and adding additional orange juice concentrate if needed to make of glaze consistency. Pour over hot cake in pan. Let sit 10-15 minutes; Turn onto wire rack to cool completely.
