ANN’S BOWLISICOUS BRUNSWICK STEW

Ingredients

1 quart tomato sauce, tomato soup or home-canned tomatoes
4 cans chicken broth
1 large onion, chopped
2-3 cups finely chopped cooked chicken, turkey or barbecue pork
2-3 cups sliced carrots
2-3 cups cubed potatoes
2-3 cups black-eyed peas
2-3 cups whole-kernel corn
2-3 cups lima beans
Hot sauce to taste
1 teaspoon liquid smoke
1 tablespoon sugar
Salt and pepper to taste
1 bay leaf
1 clove garlic, chopped
2 cups mashed potatoes

Preparation

In an 8- to 10-quart stock pot, combine all ingredients except mashed potatoes, blending well. Bring to a boil. Reduce heat to low and simmer, covered, for 1 1/2-2 hours, or until all vegetables are tender. Stir in mashed potatoes, blending well. Heat through. Makes about 8 quarts. (NOTE: A variety of vegetables, in varying amounts to suit taste, can be used in place of or in addition to the vegetables listed.)
