Ingredients

3 cups self-rising cornmeal
2 cups self-rising flour
1-2 tablespoons sugar
3/4-1 cup finely chopped onion
2-4 tablespoons creamed corn (optional)
2 cups buttermilk
1-2 eggs, beaten
Oil for frying

Preparation

In a large bowl, combine cornmeal, flour and sugar, blending well. Add onion and corn. Stir in buttermilk and eggs, blending well. (Batter will be slightly stiffer than for cornbread.) Pour oil into a deep fryer or large iron skillet, filling a deep fryer half full or the skillet 1 1/2 inches deep. Heat oil to 370 degrees. Drop batter by spoonfuls into hot oil. Cook, turning, until browned on all sides. If deep-fried, hushpuppies will rise to the top when done. Makes about 5 dozen.
