OVEN-FRIED CATFISH

Ingredients

1 whole catfish, prepared, or 4 catfish fillets
1 cup corn flake crumbs

Preparation

Spray catfish with non-stick cooking spray. Roll in corn flake crumbs. Place on baking sheet that has been coated with non-stick spray, and generously spray fish. Bake at 400 degrees for 30-45 minutes, or until golden brown. To make fish extra-crispy, turn oven to broil in the last few minutes of baking. Makes 4 servings.
