1 pound okra
1/2 cup fat-free plain yogurt
1 cup cornmeal or seasoned fish-fry coating
Wash, dry and trim ends from okra. Slice into 1/4- to 1/2-inch-thick slices. Place yogurt in a bowl, and coat okra in yogurt. Roll in cornmeal. Place okra in a single layer on a baking sheet that has been sprayed with non-stick cooking spray. Spray okra with cooking spray. Bake at 400 degrees for 20-30 minutes, until crispy and browned. (NOTE: Squash, eggplant and zucchini also may be prepared this way.) Makes 4 servings.
