SUNDAY DINNER SQUASH CASSEROLE
Ingredients
1 small onion, chopped
1 small red bell pepper, chopped
1 small green bell pepper, chopped
2 tablespoons oil
2 cups cooked, drained and mashed squash
1 cup reduced-fat, shredded sharp Cheddar cheese
1/2 cup fat-free mayonnaise
1/2 cup fat-free sour cream
1/2 cup herb stuffing mix
2 eggs (or egg substitute)
1 envelope ranch dressing mix
Preparation
In a large skillet over medium heat, saute onion and peppers in oil until tender-crisp. Remove skillet from heat. Add squash, cheese, mayonnaise, sour cream, stuffing mix, eggs and salad dressing mix. Mix well. Spoon into a 9- x 13-inch baking dish that has been sprayed with non-stick cooking spray. Bake uncovered at 350 degrees for 30-40 minutes, or until golden brown. Makes 8 servings.
