HAWAIIAN SWEET POTATO PIE

Ingredients

2 cups mashed, cooked sweet potatoes
1 cup sugar
1 cup coconut
2 eggs
1/2 cup evaporated milk
1 tablespoon vanilla
1 (9-inch) piecrust, unbaked
Topping (recipe follows)

Preparation

Combine sweet potatoes, sugar, coconut, eggs, milk and vanilla in a mixing bowl, mixing well. Pour into unbaked piecrust and bake at 350 degrees for 30 minutes. Pour cooled topping over pie.
