Ingredients

1 (8-ounce) package elbow macaroni
3/4 pound hoop cheese, grated
1 can golden mushroom soup
1/2 cup mayonnaise
1 small onion, chopped
1 small bell pepper, chopped
1 (2-ounce) jar chopped pimento, drained

Preparation

Cook macaroni according to package directions. Drain but do not rinse. Combine macaroni, all but 1/2 cup of the cheese and remaining ingredients. Pour into a greased 2-quart casserole dish. Bake at 350 degrees for about 25 minutes. Sprinkle remaining cheese on top of casserole and return to oven for about 5 minutes, or until melted. Makes 6 servings.
