SHRIMP REMOULADE

Ingredients

9 cups water
Crab boil or pickling spices
About 3 pounds unpeeled fresh shrimp
1 cup Creole or spicy brown mustard
1 cup oil
1/2 cup ketchup
1/2 cup vinegar
1/2 teaspoon hot sauce
1/4 cup minced celery
1/4 cup minced onion
1/4 cup minced bell pepper

Preparation

Combine water and crab boil or pickling spices in a large Dutch oven. Bring to a boil; add shrimp and return to a boil. Reduce heat and simmer about 3 minutes, or just until shrimp turn pink. Drain shrimp and cool. Peel, devein and set aside. In a large bowl, combine remaining ingredients. Stir in shrimp. Cover and chill several hours. Drain shrimp well and serve in lettuce-lined bowls or with toothpicks as appetizers. Makes 12 appetizer servings.
